Does anyone know if leaking intake manifold gaskets could cause lack of
heat in the cabin ?

The 3800 is not the engine prone to lower intake gasket leaks, the 3100 and
3400 are the victims here. There have been issues with the egr passage in
the 3800 composite intake cracking or degrading, causing coolant to enter
the engine, obviously if you are loosing coolant to the point the heater is
not working, you better address this as soon as possible. This applies to
the later 3800 engine with the composite intake.

The 3800 also suffers from corrosion problems. You may need the whole
cooling system cleaned and this will cause loss of cabin heat and will also
cause engine overheating...

What is composite (plastic)?

I'm interested in knowing as been told the plastic is around $400.00
parts price alone.

Redesigned and much better, about $200.00 at most part stores.
